For Puttu: 500 gm. ice flour 1 grated coconut. Salt. For Vegetable" 15 gm chopped ginger, 2 onion chopped, 2 green chillies chopped. 1 small bunch curry leaves. 5 gm mustard seeds, 1/4 tsp turmeric powder, 1 tsp coriander powder, 1 tsp red chili powder. Salt to taste. 15 ml oil, 1 potato, 1 carrot, 2 beans, 50 grams cauliflower, 1 pinch garam masala, a pinch cumin powder
- On a sloe flame,fry rice flour for 5-7 minutes. - Allow to cool and add salt. - Mix with lukewarm water and make sure that it is added little by little. - Without forming lumps mix nicely and check by holding it in hand, whether rice flour is binding together. keep aside. - make a very thick roast masala of vegetable with the above ingredients. - Take the puttu vessel and place the strainer at bottom and start filling the rice flour mixture, grated coconut and the vegetable mixture layer by layer till top. - Once it is done properly,cover the vessel and place it on top of the puttu vessel and let the steam to thru the filling. - Steam for a maximum of 10 minutes and have it hot. - Since there is vegetable mixed with the rice flour another curry is not required to eat puttu. Garnish: Fried Curry Leaves. NOTE: Instead of vegetable mix, this can be made with a prawn or even a meat mix.
